Cumberland Plateau Chicken Delight

 
INGREDIENTS:

4 boneless, skinless chicken breasts
˝ cup butter
˝ teaspoon black pepper
1 tablespoon lemon juice
˝ cup Tennessee Gourmet® Snappy Pepper Jelly
8 slices French bread
˝ teaspoon garlic powder
˝ teaspoon kosher salt
4 teaspoons mayonnaise
1 pound Monterey Jack cheese

DIRECTIONS:

Preheat oven to 400° F. Grate cheese and reserve.
Cut chicken breasts into lengthwise strips. Butter each bread slice, spread with ˝ teaspoon mayonnaise. Place bread slices onto broiling pan and lightly toast. Remove bread from oven and reserve. Reduce heat to 350° F.

In a medium skillet over medium-high heat, melt butter and pepper jelly; add lemon juice, garlic powder, pepper, and salt. Add chicken slices and cook until chicken is opaque.
Place chicken atop the bread slices and pour sauce over the top. Add grated cheese to each slice. Bake in oven until the cheese is golden brown.
